300 gr Settings
100 gr cayenne pepper (part of it I leave it whole)
5 cloves of shallot
3 cloves of garlic
1 segment of ginger
2 pieces of orange leaf
2 bay leaves
2 tablespoons soy sauce
1 tablespoon brown sugar comb
1/2 teaspoon salt
1/2 teaspoon broth
Boil the set with 1 teaspoon of salt until tender (I use presto). Then cut it according to taste. Set the settings and broth aside.
Roughly scratch the shallots, garlic, ginger and cayenne pepper. Heat the oil sufficiently, saute the seasoning that has been pulverized with orange leaves and bay leaves until ripe and fragrant.
Add the cut pieces, add the set stock broth. Season with brown sugar, salt, sweet soy sauce and powdered broth. Stir well.
Add whole cayenne pepper. Cook until the sauce shrinks and the spices are absorbed. Don’t forget the taste test.
